Spinach Artichoke White Bean Dip

Yields 4 servings

Ingredients

  • 1/4 cup fresh Romano cheese, grated
  • 1/4 cup mayonnaise
  • 1 tsp. lemon juice, fresh
  • 1/4 tsp. black pepper
  • 1/8 tsp. red pepper, ground
  • 2 garlic cloves, minced
  • 1, 15 oz. can white beans, rinsed & drained
  • 1, 14 oz. can artichoke hearts, drained & roughly chopped
  • Cooking spray
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 350°. Set aside an oven safe baking dish sprayed with cooking spray.
  2. In a food processor, combine the Romano cheese, mayo, lemon juice, salt, black pepper, red pepper, garlic, and white beans, then pulse until smooth.
  3. Transfer the mixture to a mixing bowl and add the artichokes and spinach. Mix until combined.
  4. Pour mixture into the baking dish and sprinkle with mozzarella cheese. Bake for 20 minutes or until bubbly and golden.
