Spinach Artichoke White Bean Dip
Yields 4 servings
Ingredients
- 1/4 cup fresh Romano cheese, grated
- 1/4 cup mayonnaise
- 1 tsp. lemon juice, fresh
- 1/4 tsp. black pepper
- 1/8 tsp. red pepper, ground
- 2 garlic cloves, minced
- 1, 15 oz. can white beans, rinsed & drained
- 1, 14 oz. can artichoke hearts, drained & roughly chopped
- Cooking spray
- 1/2 cup mozzarella cheese, shredded
Instructions
- Preheat the oven to 350°. Set aside an oven safe baking dish sprayed with cooking spray.
- In a food processor, combine the Romano cheese, mayo, lemon juice, salt, black pepper, red pepper, garlic, and white beans, then pulse until smooth.
- Transfer the mixture to a mixing bowl and add the artichokes and spinach. Mix until combined.
- Pour mixture into the baking dish and sprinkle with mozzarella cheese. Bake for 20 minutes or until bubbly and golden.
