Loaded Broccoli Avocado Salad
Yields 4 servings
Ingredients
- 4 cups broccoli florets, cut into bite-sized pieces
- 2 Tbsp. red onion, minced
- 1/4 cup cheddar cheese, shredded
- 1/4 cup cooked bacon, chopped
- 2 large avocados, ripe, peeled and pitted
- 1/2 cup ranch dressing
- 1/4 of small red onion, peeled and sliced
Instructions
- Mix together the broccoli, minced onions, cheese and bacon in a large bowl and set aside.
- Set aside one avocado half. Mash the remaining avocado flesh in a medium bowl. Add the dressing and mix, then add to the broccoli mixture and mix until combined.
- Cut the reserved avocado half into slices. Add the avocado slices and red onion slices on top of the salad and serve immediately.
