Coconut Date Bars

Yields 8 servings

Ingredients

  • 1/3 cup almonds, slivered
  • 1/2 cup unsweetened coconut flakes
  • 10 dates, pitted, coarsely chopped
  • 10 dates, pitted, coarsely chopped
  • 10 dates, pitted, coarsely chopped

Instructions

  1. In a food processor, pulse almonds and coconut until combined. Then, add the dates and pulse. Next, add the cashews and coconut oil until the mixture is thick and sticks together. If the mixture is not sticking, add additional dates and pulse until combined.
  2. Line an 8x8 baking dish with parchment paper. Add the date mixture to the pan and press down until evenly distributed. Refrigerate for 30 minutes prior to serving. Cut into 8 pieces.

Nutrition per serving: 90 calories, 4 g carbohydrates, 8 g fat, 2 g fiber, 2 g protein, 2 g sugar.
