Mango Quinoa Salad

Yields 6 servings

Ingredients

  • 1 cup quinoa, cooked
  • 1 can black beans, rinsed & drained
  • 1 fresh mango, chopped
  • 1 cucumber, chopped
  • 1 handful of cilantro
  • 1/4 cup red onion, chopped
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. coriander
  • 1 tsp. garlic powder
  • 1 lemon, juiced

Instructions

  1. Cook quinoa according to package instructions. Set aside and let cool.
  2. Mix all ingredients together until thoroughly combined.
  3. Store in the refrigerator until ready to serve.

Nutrition per serving: 130 calories, 26 g carbohydrates, 1 g fat, 5 g fiber, 6 g protein, 85 mg sodium, 9 g sugar.
