Braised Collard Greens
Serving size: 4 servings
Ingredients
- 1-2 Tbsp. olive oil
- 1/2 large onion, diced
- 5-6 cloves garlic, minced
- 1 stalk celery, diced
- 2 Tbsp. apple cider vinegar
- 1 tsp. red pepper flakes
- 1 tsp. paprika
- 1 tsp. dried oregano
- Pinch of salt and pepper
- 1 large bunch collard greens, about 6 cups chopped
- 1 cup diced tomatoes
- 1 cup vegetable stock
- 1/4 cup cream
- Hot sauce, optional
Instructions
- Preheat the oven to 350°F. Add oil to a cast iron skillet and heat on medium. Add onions and celery and cook until soft, approximately 2-3 minutes.
- Add garlic and cook an additional minute. Then, add vinegar and mix, scrapping any stuck bits from the skillet.
- Add spices and mix. Add collard greens and tomatoes and stir. Cover with an oven safe lid or aluminum foil and bake in the oven for 30 minutes.
- Remove from the oven and mix in the cream, then bake an additional 15 minutes.
- Remove from oven and season with salt and pepper. Serve as a side dish or on top of your favorite grain. Add hot sauce if you like spicy!
