Teff Energy Bars

Serving size: 12 servings

Ingredients

  • 2 cups dates, pitted
  • 2 Tbsp. maple syrup
  • 2 Tbsp. nut or seed butter
  • 3 Tbsp. coconut oil
  • 1/4 tsp. salt
  • 1 cup teff
  • 1/4 cup almond flour
  • 1/4 cup chia seeds
  • 3/4 cup dark chocolate chips
  • 1 cup walnuts, chopped

Instructions

  1. Preheat oven to 325°F. Set aside an 8x11 baking dish lined with parchment paper.
  2. In a food processor, add dates, maple syrup, nut or seed butter, coconut oil and salt. Pulse until smooth, about 2-3 minutes.
  3. Add teff, almond flour and chia seed and pulse until combined. Add dark chocolate and walnuts and pulse until combined. Do not over-pulse, walnuts should add texture to the bars.
  4. Press mixture evenly into the dish and bake for 30 minutes. Let cool for 2 hours, then place in the refrigerator for 2 hours prior to cutting into bars. Keep leftovers refrigerated.
