Flaxseed Mug Muffin

Ingredients
- 1/4 cup ground flax
- 1/2 tsp. baking powder
- 1 tsp. cinnamon
- Pinch of nutmeg
- 1 large egg
- 1 tbsp. molasses
- 1 tsp. oil
- 1/2 tsp. vanilla extract
- 1-2 tbsp. mini chocolate chips, berries or chopped dried fruit, optional
Instructions
- Combine all ingredients in a mug. Microwave on high for 1 minute. If desired, enjoy with butter, jelly or nut butter.
