Simply Red Cabbage Salad

Serving size: 6 servings

Ingredients

  • 1 head red cabbage, medium
  • 1 bunch parsley, flat leafed & finely chopped
  • 2 small bunches green onions, white & green parts, finely chopped
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup lemon juice, freshly squeezed
  • 1 tsp. sea salt
  • 1/8 tsp. black pepper

Instructions

  1. In a food processor fitted with the S blade, pulse chunks of cabbage until roughly chopped. Toss with parsley, green onions, olive oil, lemon juice, salt & pepper. Adjust to taste using more olive oil, lemon juice, salt and pepper if needed.

Nutrition per serving: 214 calories, 13 g carbohydrates, 18 g fat, 4 g fiber, 3 g protein, 436 mg sodium, 6 g sugar.
