Green Goddess Hummus

Serving size: 7 servings

Ingredients

  • 1/4 cup tahini
  • 1/4 cup lemon juice, fresh
  • 2 tbsp. olive oil
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh tarragon, chopped
  • 1/4 cup fresh tarragon, chopped
  • 2-3 tbsp. fresh chives, chopped 1 large garlic clove, chopped
  • 1/2 tsp. salt, more to taste
  • 1, 15 oz. can of chickpeas/ garbanzo beans, drained and rinsed
  • 1-2 tbsp. water, optional Garnish with extra olive oil and a sprinkling of fresh herbs, chopped

Instructions

  1. In a food processor, mix tahini and lemon juice until light and fluffy. Add olive oil, parsley, tarragon, chives, garlic and salt to the food processor and pulse for 1 minute or until well pureed.
  2. Add one half of the chickpeas and pulse for one minute. Add the remaining chickpeas and pulse until smooth. Make sure to scrape down the side of the bowl to ensure all ingredients are well mixed. If the consistency of your hummus is too thick, add 1 tablespoon of water at a time and blend until desired consistency is reached.
  3. Transfer to a serving bowl and drizzle with one tablespoon olive oil and sprinkle with herbs if desired. Store in the refrigerator up to one week in an airtight container.
