Healthy Granola Bars
	Yields 32 servings
	Ingredients
- 2 1/2 cups oats
 - 1 1/2 cups quinoa, uncooked
 - 1 cup almonds, slivered
 - 1/3 cup chia seeds
 - 1 cup peanut butter crunchy
 - 1/2 cup honey
 - 1/4 cup coconut oil, melted
 - 1/2 cup flaxseed meal
 - 1 tsp. salt
 - 2 cups chocolate chips
 
Instructions
- Preheat oven to 350°F. Set aside a 12x18” baking pan.
 - Place the oats, quinoa, almonds and chia seeds evenly on a rimmed baking sheet. Toast for 15 minutes or until golden brown.
 - In a large bowl, mix the peanut butter, honey and melted coconut oil. Add the toasted ingredients, along with the flaxseed meal and salt, and combine.
 - Press mixture into a 12x18” baking pan. Bake for 5 minutes or until bars are set. Remove from oven and sprinkle with chocolate chips. Return to oven for 5 minutes or until chocolate chips are melted. Remove from oven and spread chocolate over the bars evenly.
 - Place in the freezer until the chocolate is firm, about 20 minutes. Then cut into bars and enjoy.
