Lemon Blueberry Biscuits

Yields 12 servings

Ingredients

  • 2 cups all-purpose flour or gluten-free substitute
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup lemon yogurt
  • 1 large egg, room temperature
  • 1/4 cup butter, melted
  • 1 tsp. lemon zest
  • 1 cup blueberries, fresh or frozen
  • Glaze:
  • 1/2 cup confectioners’ sugar
  • 1 Tbsp. lemon juice, fresh
  • 1/2 tsp. lemon zest

Instructions

  1. Preheat the oven to 400°.
  2. Using a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  3. In a separate bowl, whisk the yogurt, egg, melted butter, and lemon zest until thoroughly combined.
  4. Add the flour mixture to the wet mixture and combine until just moistened. Then fold in the blueberries.
  5. Drop 1/3 cup of the batter on a greased baking sheet, spacing biscuits by 1 inch. Bake for 15-18 minutes or until light brown.
  6. Using a small bowl, combine the glaze ingredients until smooth then drizzle onto the warm biscuits.

Nutrition per serving: 210 calories, 35 g carbohydrates, 30 mg cholesterol, 6 g fat, 1 g fiber, 4 g protein, 240 mg sodium, 17 g sugar.
