Black Bean Mango Salsa
Yields 4 servings
Ingredients
- 2 medium mangos, peeled & cubed
- 1 cup black beans, canned, rinsed & drained
- 1/4 cup sweet red pepper, finely chopped
- 2 Tbsp. red onion, finely chopped
- 2 Tbsp. fresh cilantro, minced
- 2 Tbsp. orange juice
- 1 Tbsp. jalapeno pepper, finely chopped
- 1 Tbsp. lime juice
- 1/8 tsp. cumin, ground
- Salt to taste
Instructions
- Combine all ingredients together. Refrigerate until ready to serve. Serve with tortilla chips or as a topping for your favorite Mexican inspired dish.
