Brussels Sprouts Salad
Yields 6 servings
Ingredients
- 5 Tbsp. extra virgin olive oil
- 5 Tbsp. lemon juice, fresh
- 1/4 cup fresh parsley, chopped
- 1 tsp. salt
- 1 tsp. black pepper
- 2 lb. Brussels sprouts, halved & thinly sliced
- 1/2 cup toasted almonds, chopped
- 1/2 cup pomegranate seeds
- Shaved Parmesan, for serving
Instructions
- In a medium bowl, whisk the oil, lemon juice, parsley, salt and pepper together until combined. Add the sliced Brussels sprouts and toss until thoroughly combined.
- Let sit for at least 20 minutes to meld flavors. Toss salad occasionally.
- Add the almonds and pomegranate seeds and combine. Top with Parmesan and serve.
