Grapefruit Walnut Feta Salad
Yields 4 servings
Ingredients
- 1 red grapefruit, with juice
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp. sugar
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 4 cups butter lettuce, torn
- 4 Tbsp. feta cheese, crumbled
- 4 Tbsp. walnuts, toasted
Instructions
- Peel and section the grapefruit over a bowl while preserving the juice. Squeeze out the remaining juice, then discard the membrane and peel.
- In a small bowl, combine 3 tablespoons grapefruit juice, olive oil, sugar, salt and pepper using a whisk.
- Divide lettuce evenly onto four plates. Top with 1 tablespoon walnuts and 1 tablespoon crumbled feta and equal amounts of grapefruit and dressing, then serve.
