Grapefruit Walnut Feta Salad

Yields 4 servings

Ingredients

  • 1 red grapefruit, with juice
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp. sugar
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 4 cups butter lettuce, torn
  • 4 Tbsp. feta cheese, crumbled
  • 4 Tbsp. walnuts, toasted

Instructions

  1. Peel and section the grapefruit over a bowl while preserving the juice. Squeeze out the remaining juice, then discard the membrane and peel.
  2. In a small bowl, combine 3 tablespoons grapefruit juice, olive oil, sugar, salt and pepper using a whisk.
  3. Divide lettuce evenly onto four plates. Top with 1 tablespoon walnuts and 1 tablespoon crumbled feta and equal amounts of grapefruit and dressing, then serve.

Nutrition per serving: 160 calories, 8 g carbohydrates, 10 mg cholesterol, 14 g fat, 2 g fiber, 3 g protein, 160 mg sodium, 2 g sugar.
