Lentil Brownies
Yields 9 servings
Ingredients
- Nonstick cooking spray
- 1/2 cup dry brown lentils
- 1 cup rolled oats
- 1/4 cup cocoa powder
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup applesauce
- 1/3 cup honey
- 1/4 cup creamy almond butter or other nut butter
- 2 tsp. vanilla extract
- 1 egg
- 1 1/4 cups semisweet chocolate chips
Instructions
- Preheat the oven to 350°F. Set aside an 8x8 baking dish and spray with cooking spray.
- Bring lentils and one cup water to a boil. Cover, reduce heat to simmer and let cook until lentils are tender, around 15-20 minutes. Remove from heat and set aside.
- In a food processor, add the oats, cocoa powder, baking powder, baking soda and salt. Pulse until a fine powder.
- Add the cooked lentils with any remaining water to the food processor along with the applesauce, honey, almond butter, vanilla and egg. Pulse until you have a smooth batter. Fold 1 cup of chocolate chips into the batter.
- Pour the batter into the prepared baking dish. Using a spatula, spread the batter out evenly and sprinkle the remaining chocolate chip on the top. Bake for 25 minutes, remove from oven and let cool for 15 minutes prior to cutting.
