Lentil Tabbouleh

Yields 4 servings

Ingredients

  • 1 cup green lentils
  • 1 bunch of green onions, sliced
  • 1 cup cherry tomatoes, sliced in half
  • 1 bunch fresh flat leaf parsley, finely chopped
  • 1 bunch fresh mint, finely chopped
  • 4 Tbsp. extra virgin olive oil
  • 1 fresh lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils in a colander and remove any debris. Bring the lentils and 2 cups of salted water to a boil, cover and reduce heat to simmer. Cook for 20-25 minutes or until lentils are tender but not mushy. Drain excess water and set aside to cool.
  2. Mix together the cooled lentils, green onions, tomatoes, parsley, mint and olive oil. Add lemon juice to taste and season with salt and pepper then serve.
