Cream of Amaranth

Yields 2 servings

Ingredients

  • 1/2 cup amaranth
  • 1 cup water
  • 6 Tbsp. milk of choice
  • 2 Tbsp. honey or maple syrup
  • 1/2 tsp. cinnamon
  • Coconut, sliced almonds, fresh berries, etc., optional

Instructions

  1. Bring the water and amaranth to a boil. Reduce heat to low, cover and let simmer 20-25 minutes or until water is mostly absorbed.
  2. Portion mixture into two bowls and add the milk, sweetener, cinnamon and any additional toppings you desire.
