Tabbouleh Amaranth Salad

Yields 4 servings

Ingredients

  • 1 1/2 cups water
  • 1/2 cup amaranth
  • 2 cups English cucumber, diced
  • 1/2 cup celery, sliced thin
  • 1/2 cup red onion, diced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup flat leaf parsley, chopped
  • 1/4 cup pine nuts
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp. lemon rind
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup cooked chickpeas
  • 1 cup feta, crumbled

Instructions

  1. Bring 1 1/2 cup water and the amaranth to a boil, reduce heat to simmer, cover and let cook until the water is almost absorbed, around 20 minutes. Remove from heat and let cool.
  2. In a large bowl, combine the remaining ingredients except the feta. Add the cooled amaranth and combine.
  3. Lastly, fold in the feta cheese. Refrigerate for 1 hour and serve.
