Roasted Potatoes and Asparagus with Parmesan
Yields 4 servings
Ingredients
- 1 lb. asparagus, cut into 1 inch pieces
- 1 lb. Yukon Gold potatoes, cut into 1 inch pieces
- 3 Tbsp. olive oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/3 cup Parmesan, grated
Instructions
- Preheat the oven to 450°F. Set aside a baking sheet.
- Toss the asparagus, potatoes, olive oil, and salt and pepper together, then spread ingredients evenly on the baking sheet.
- Roast for 20 minutes or until soft, stirring once. Remove from oven and sprinkle with Parmesan, then return to oven until cheese is melted and golden, around 2-3 minutes more. Serve immediately.
