Herb Salad with Pomegranate & Pistachio
Yields 4 servings
Ingredients
- Juice of one orange
- 3 Tbsp. red wine vinegar
- 1 Tbsp. honey
- 1/2 cup fresh dill leaves, chopped
- 1/2 cup fresh mint leaves, chopped
- 5 oz. mixed salad greens
- 1 bunch green onions, diced
- Seeds of 1 pomegranate
Instructions
- In a small bowl, whisk the orange juice, vinegar, and honey. In a large bowl, toss the mixed greens, dill, mint, green onions and pomegranate seeds. Pour the dressing over the salad and combine. Serve immediately.
