Almond Bread

Yields 8 servings

Ingredients

  • 1 1/2 cups almond flour
  • 1/3 cup flaxseed, ground
  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 Tbsp. olive oil
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 350°F and set aside an 8x4 loaf pan greased or lined with parchment paper.
  2. In a large bowl, combine the almond flour, ground flaxseed, eggs, almond milk, olive oil, baking powder and salt. Mix ingredients until a soft dough forms.
  3. Transfer batter to a loaf pan and baked for 40 minutes or until bread is golden brown on top. Remove from oven and let cool for 10 minutes. Then transfer to a wire rack to cool completely.

Nutrition per serving: 250 calories, 3 g carbohydrates, 95 mg cholesterol, 24 g fat, 2 g fiber, 7 g protein, 190 mg sodium, 1 g sugar.
