Green Bean Almondine
Yields 4 servings
Ingredients
- 6 cups water
- 1 1/2 tsp. salt, divided
- 1 lb. French green beans, trimmed & washed
- 1/4 cup unsalted butter
- 1/4 cup almonds, sliced
- 1/4 cup shallot, chopped
- 1 tsp. lemon zest
- 2 tsp. fresh lemon juice
- 1/4 tsp. black pepper
Instructions
- Bring 6 cups of water with 1 teaspoon salt to a boiling in a large saucepan. Set aside a large bowl filled with ice water.
- Add the green beans and cook for 3-4 minutes or until bright green and just tender. Remove beans with tongs and place them in the ice water. Let chill for 4 minutes. Drain beans thoroughly once cool.
- Melt the butter in a nonstick skillet over medium heat. Once butter begins to brown, add the almonds and shallots. Cook for 2 minutes, stirring often until almonds are slightly toasted.
- Mix in the lemon zest and juice, pepper, green beans and ½ teaspoon salt. Stir to combine and serve once beans are heated thoroughly.
