Crustless Swiss Chard Quiche
Yields 8 servings
Ingredients
- 1 tsp. olive oil
- 1/2 onion, diced
- 1/2 bunch of Swiss chard
- 2 1/2 cups cheese, shredded
- 4 eggs
- 1 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F. Set aside a pie dish oiled with cooking spray.
- Wash Swiss chard leaves and cut off ends of the stem. Chopped leaves and stems.
- Add the onion and the chard to the oil and sauté until tender. Add salt and pepper to taste.
- Whisk the eggs, then add the milk and shredded cheese. Fold in the chard mixture and pour into the pie dish.
- Bake for 35-45 minutes or until golden brown. Serve immediately.
