Mushroom Veggie Burger

Yields 10 servings

Ingredients

  • 1/2 cup shiitake mushrooms, fresh
  • 1 Tbsp. olive oil
  • 2 cups of cooked barley
  • 2 cup white beans, cooked
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 2 Tbsp. nutritional yeast
  • 1 Tbsp. pickle juice
  • 1 Tbsp. Italian seasoning
  • 1 tsp. sea salt
  • 1 tsp. pepper

Instructions

  1. Preheat the oven to 400°F and set aside a baking sheet covered with parchment paper.
  2. Slice the shiitake mushrooms and sauté for 10 minutes in olive oil.
  3. In a food processor, combine the beans, barley and cooked mushrooms. Pulse until mixture creates a thick crumb like texture. Pour the mixture in a mixing bowl.
  4. Add the remaining ingredients into the crumb mixture and combine with your hands until ingredients are fully incorporated.
  5. Make 10 patties and place them on the baking sheet. Bake for 30 minutes or until brown. Serve with your favorite condiments on a bun.

Nutrition per serving: 220 calories, 39 g carbohydrates, 3.5 g fat, 11 g fiber, 9 g protein, 15 mg sodium, 1 g sugar.
