Strawberry Quinoa Salad with Avocado

Yields 4 servings

Ingredients

  • 3 cups quinoa, cooked (about 1 cup dry)
  • 1 cup strawberries, chopped
  • 1 avocado, diced
  • 2 Tbsp. fresh mint, chopped
  • 2 Tbsp. olive oil
  • 1 Tbsp. honey
  • Juice of 1 lime
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Toss the cooked quinoa, strawberries, avocado and mint together in a serving bowl.
  2. In a small bowl, whisk the olive oil, honey, lime juice, salt and pepper.
  3. Pour the dressing over the salad and toss to mix. Serve immediately or chill for 30-60 minutes in the refrigerator.
