Strawberry Quinoa Salad with Avocado
Yields 4 servings
Ingredients
- 3 cups quinoa, cooked (about 1 cup dry)
- 1 cup strawberries, chopped
- 1 avocado, diced
- 2 Tbsp. fresh mint, chopped
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- Juice of 1 lime
- 1/4 tsp. salt
- 1/8 tsp. pepper
Instructions
- Toss the cooked quinoa, strawberries, avocado and mint together in a serving bowl.
- In a small bowl, whisk the olive oil, honey, lime juice, salt and pepper.
- Pour the dressing over the salad and toss to mix. Serve immediately or chill for 30-60 minutes in the refrigerator.
