Cauliflower Mashed Potatoes

Yields 6 servings

Ingredients

  • 1 large head of cauliflower, broken into florets
  • 1 cup Parmesan cheese, shredded & divided
  • 1/3 cup heavy whipping cream or half and half
  • 1 Tbsp. butter
  • 1/2 tsp. pepper
  • Fresh parsley, minced, optional

Instructions

  1. In a large saucepan, add 1 inch of water and the cauliflower florets. Bring to a boil, cover, and reduce heat to simmer. Cook until soft, around 10-12 minutes. Drain excess water.
  2. Mash the cauliflower and mix in 1/2 cup parmesan, cream, butter, and pepper. Sprinkle the remaining parmesan and parsley over the mashed cauliflower and serve.
