Spicy Hemp Seed and Sweet Potato Salad

Yields 4 servings

Ingredients

  • 2 large, sweet potatoes, peeled & diced
  • 1/4 cup of hemp seeds
  • 1 Tbsp. olive oil
  • 1 tsp. smoked paprika
  • 1/2 tsp. cayenne pepper
  • 1 bunch of green onions, chopped
  • 1 cup arugula
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400° and set aside a rimmed baking sheet
  2. Toss the diced sweet potatoes with the olive oil, smoked paprika, cayenne pepper, salt and pepper. Place it on a baking sheet in a single layer and cook for 25-30 minutes or until tender.
  3. Once done, remove from the oven and let cool slightly.
  4. In a serving bowl, toss the sweet potatoes with hemp seeds, green onions and arugula to serve.

Nutrition per serving: 180 calories, 20 g carbohydrates, 9 g fat, 4 g fiber, 6 g protein, 110 mg sodium, 6 g sugar.
