Amaranth Pancakes
Yields 1 dozen pancakes or 4 servings
Ingredients
- 2 large eggs
- 1 1/4 cup milk of choice
- 3 Tbsp. butter, melted
- 1 1/2 cup amaranth flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2 Tbsp. sugar
Instructions
- In a medium bowl, whisk eggs and milk until light and foamy, then mix in the melted butter.
- In a separate bowl, whisk together the amaranth flour, salt, baking powder and sugar.
- Then add the dry ingredients to the egg and milk mixture and combine. Let the batter rest for 15 minutes to thicken. For thinner pancakes, add more milk.
- Heat a greased skillet over medium heat. Once hot, scoop 1/4 cup batter onto the skillet and cook until the batter begins to bubble. Flip the pancake and cook on the other side for 1-2 minutes more. Serve immediately.
