Amaranth Pancakes

Yields 1 dozen pancakes or 4 servings

Ingredients

  • 2 large eggs
  • 1 1/4 cup milk of choice
  • 3 Tbsp. butter, melted
  • 1 1/2 cup amaranth flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 Tbsp. sugar

Instructions

  1. In a medium bowl, whisk eggs and milk until light and foamy, then mix in the melted butter.
  2. In a separate bowl, whisk together the amaranth flour, salt, baking powder and sugar.
  3. Then add the dry ingredients to the egg and milk mixture and combine. Let the batter rest for 15 minutes to thicken. For thinner pancakes, add more milk.
  4. Heat a greased skillet over medium heat. Once hot, scoop 1/4 cup batter onto the skillet and cook until the batter begins to bubble. Flip the pancake and cook on the other side for 1-2 minutes more. Serve immediately.
