Asparagus Spaghetti
Yields 8 servings
Ingredients
- 2 lbs. fresh asparagus, cut into 1 inch pieces
- 16 oz. spaghetti
- 8 bacon strips, chopped
- 4 green onions, sliced
- 1/2 tsp. pepper
- 1/2 cup half and half
- 1/2 to 3/4 cup Parmesan, grated
- 1/4 cup butter, cubed
Instructions
- Bring 1/2 inch water to a boil in a large saucepan. Add asparagus, cover and cook for 3-5 minutes or until tender-crisp. Drain water and set asparagus aside.
- Cook spaghetti in 6 quart stockpot in boiling water according to package instructions. In the meantime, heat a large skillet over medium heat, add the bacon, stirring occasionally, and cook until crisp. Remove bacon with a slotted spoon and drain on paper towels.
- Add green onions to the bacon grease and cook for 1-2 minutes or until tender. Then add the asparagus and pepper and heat thoroughly.
- Drain pasta and return to the stockpot. Add the asparagus mixture, cheese, cream, butter and bacon. Toss ingredients together until butter is melted and serve immediately.
