Avocado Chips
Yields 4 servings
Ingredients
- 1 large avocado, ripe, peeled, and pitted
- 3/4 cup fresh Parmesan, grated
- 1 tsp. fresh lemon juice
- 1/2 tsp. garlic powder
- 1/2 tsp. Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 325° and set aside a baking sheet lined with parchment paper.
- Mash the avocado in a medium bowl with a fork until smooth. Add the Parmesan, lemon juice, garlic powder and Italian seasoning and mix to combine. Add salt and pepper to taste and mix.
- Scoop out a heaping teaspoon of the mixture and place on the baking sheet, leaving 3 inches in between each cracker. Flatten each scoop of batter using the back of a spoon. Crackers should be 3 inches wide. Batter will be sticky.
- Bake for 30 minutes or until golden in color. Let cool completely prior to eating. Eat crackers with salsa or hummus if desired.
