Avocado Patties

Ingredients
- 1 avocado, ripe, peeled, and pitted
- 1 bunch of green onions, diced
- 1 garlic clove, minced
- 3 Tbsp. cilantro, minced
- 1 tsp. coriander powder
- 1 tsp. cumin powder
- 2 Tbsp. flour of choice
- 1 small egg
- Salt and pepper to taste
- Avocado oil
Instructions
- Place the avocado flesh in a medium bowl and mash with a fork. Add all of the remaining ingredients except the avocado oil, and mix.
- Warm a skillet over medium heat, adding a small amount of avocado oil.
- Once skillet is hot, add a heaping tablespoon of batter. Fry patty on both sides until golden brown. If your batter is too runny, add some additional flour to thicken. Serve hot as a side dish.
