Avocado Pudding
Yields 4 servings
Ingredients
- 2 medium avocados, ripe, peeled, and pitted
- 4 Tbsp. unsweetened cocoa powder
- 4 Tbsp. maple syrup or honey
- 1/3 cup unsweetened coconut milk, canned
- 2 tsp. pure vanilla extract
- Optional toppings, cinnamon, seeds, coconut flakes, berries
Instructions
- In a blender or food processor, combine the avocado, cocoa powder, maple syrup, coconut milk and vanilla and blend until smooth. If too thick, add more coconut milk, 1 teaspoon at a time to thin pudding.
- Transfer to a container with a lid and refrigerate for 30 minutes to chill.
- Serve as is or with your favorite toppings.
