Avocado Pudding

Yields 4 servings


  • 2 medium avocados, ripe, peeled, and pitted
  • 4 Tbsp. unsweetened cocoa powder
  • 4 Tbsp. maple syrup or honey
  • 1/3 cup unsweetened coconut milk, canned
  • 2 tsp. pure vanilla extract
  • Optional toppings, cinnamon, seeds, coconut flakes, berries


  1. In a blender or food processor, combine the avocado, cocoa powder, maple syrup, coconut milk and vanilla and blend until smooth. If too thick, add more coconut milk, 1 teaspoon at a time to thin pudding.
  2. Transfer to a container with a lid and refrigerate for 30 minutes to chill.
  3. Serve as is or with your favorite toppings.
