Balsamic Tomato Salad

Yields 4 servings

Ingredients

  • 24 ounces tomatoes of choice
  • 3 tbsp. extra-virgin olive oil
  • 2 tbsp. balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp. fresh oregano, finely chopped or 1/2 tsp. dried oregano
  • 1 tsp. fresh basil, finely chopped or 1/2 tsp. dried basil
  • Salt & pepper to taste

Instructions

  1. If using a variety of tomatoes, slice grape and cherry tomatoes in half. Core, remove seeds, and dice larger tomatoes.
  2. Whisk olive oil, balsamic vinegar, minced garlic, and herbs together.
  3. Place chopped tomatoes in a large bowl. Pour dressing over tomatoes and toss to combine.
  4. Place mixture on a serving dish and season with salt and pepper to taste. Garnish with fresh oregano or basil if desired.
