Balsamic Tomato Salad
Yields 4 servings
Ingredients
- 24 ounces tomatoes of choice
- 3 tbsp. extra-virgin olive oil
- 2 tbsp. balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp. fresh oregano, finely chopped or 1/2 tsp. dried oregano
- 1 tsp. fresh basil, finely chopped or 1/2 tsp. dried basil
- Salt & pepper to taste
Instructions
- If using a variety of tomatoes, slice grape and cherry tomatoes in half. Core, remove seeds, and dice larger tomatoes.
- Whisk olive oil, balsamic vinegar, minced garlic, and herbs together.
- Place chopped tomatoes in a large bowl. Pour dressing over tomatoes and toss to combine.
- Place mixture on a serving dish and season with salt and pepper to taste. Garnish with fresh oregano or basil if desired.
