Beet Chips

Yields 5 servings

Ingredients

  • 2 large beets, thinly sliced
  • 1 Tbsp. extra-virgin olive oil
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 200°F. Line two large baking sheets with parchment paper and set aside.
  2. Toss the beet slices with oil and salt. Spread the slices out in a single layer on the baking sheets.
  3. Bake on the upper and lower racks for around 3 hours or until crisp. Rotate the pans, top to bottom and front to back halfway through baking. Remove from oven and let cool for 30 minutes before serving.

Nutrition per serving: 45 calories, 5 g carbohydrates, 3 g fat, 1 g fiber, 1 g protein, 270 mg sodium, 3 g sugar.
