Black Bean Brownies

Yields 16 servings

Ingredients

  • 1 - 15 oz. can black beans, rinsed & drained
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 3 large eggs
  • 3 Tbsp. olive oil
  • 1 tsp. instant coffee, optional
  • 1 tsp. vanilla extract
  • 1 pinch of salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F. Set aside a lightly greased 8x8 inch baking dish.
  2. Combine all the ingredients, except the chocolate chips, in a food processor or blender and puree until smooth.
  3. Pour batter into the baking dish. Sprinkle with chocolate chips, then bake for 30 minutes or until thoroughly cooked. Remove from oven and let cool, then cut into 16 portions and enjoy.
