Black Bean Dip

Yields 10 servings

Ingredients

  • 2 - 15 oz. cans black beans, rinsed & drained
  • 4 oz. cream cheese, softened
  • 1/2 cup sour cream
  • 1 jalapeno, diced
  • 2 cloves garlic, minced
  • 1/2 tsp. cumin, ground
  • 1/2 tsp. chili powder, ground
  • Juice of 1/2 lime
  • 1/2 cup crumbled queso fresco
  • 1 cup pepper jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • Garnish with cherry tomatoes & cilantro
  • Serve with tortilla chips

Instructions

  1. Preheat the oven to 350°F.
  2. Add the black beans, cream cheese, and sour cream to a food processor. Pulse to combine.
  3. Next add the jalapeno, garlic, cumin, chili powder, lime juice and queso fresco to the mixture and pulse until smooth.
  4. Transfer the mixture to an oven safe baking dish. Top with the shredded pepper jack and cheddar cheese. Bake for 15 minutes or until the cheese is melted.
  5. Remove from oven, add garnishes and serve with tortilla chips.
