Black Bean Dip
Yields 10 servings
Ingredients
- 2 - 15 oz. cans black beans, rinsed & drained
- 4 oz. cream cheese, softened
- 1/2 cup sour cream
- 1 jalapeno, diced
- 2 cloves garlic, minced
- 1/2 tsp. cumin, ground
- 1/2 tsp. chili powder, ground
- Juice of 1/2 lime
- 1/2 cup crumbled queso fresco
- 1 cup pepper jack cheese, shredded
- 1/2 cup cheddar cheese, shredded
- Garnish with cherry tomatoes & cilantro
- Serve with tortilla chips
Instructions
- Preheat the oven to 350°F.
- Add the black beans, cream cheese, and sour cream to a food processor. Pulse to combine.
- Next add the jalapeno, garlic, cumin, chili powder, lime juice and queso fresco to the mixture and pulse until smooth.
- Transfer the mixture to an oven safe baking dish. Top with the shredded pepper jack and cheddar cheese. Bake for 15 minutes or until the cheese is melted.
- Remove from oven, add garnishes and serve with tortilla chips.
