Black Bean Mango Salsa

Yields 4 servings

Ingredients

  • 2 medium mangos, peeled & cubed
  • 1 cup black beans, canned, rinsed & drained
  • 1/4 cup sweet red pepper, finely chopped
  • 2 Tbsp. red onion, finely chopped
  • 2 Tbsp. fresh cilantro, minced
  • 2 Tbsp. orange juice
  • 1 Tbsp. jalapeno pepper, finely chopped
  • 1 Tbsp. lime juice
  • 1/8 tsp. cumin, ground
  • Salt to taste

Instructions

  1. Combine all ingredients together. Refrigerate until ready to serve. Serve with tortilla chips or as a topping for your favorite Mexican inspired dish.
