Blueberry Cucumber Salad

Yields 4 servings

Ingredients

  • 1 cucumber
  • 2 cup blueberries, fresh
  • 2 Tbsp. scallions, sliced thin
  • 1/2 cup cilantro, chopped
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. lime juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup feta, crumbled

Instructions

  1. Cut the cucumber in half, then using a spoon, remove the seeds. Next cut the cucumber into thin slices and place in a large bowl.
  2. Add the blueberries, scallions and cilantro and toss to combine.
  3. In a small bowl, whisk the olive oil, lime juice, salt and pepper, then add to the salad and toss.
  4. Fold in the crumbled feta and serve.

Nutrition per serving: 170 calories, 14 g carbohydrates, 15 mg cholesterol, 11 g fat, 7 g fiber, 5 g protein, 320 mg sodium, 10 g sugar.
