Blueberry Cucumber Salad
Yields 4 servings
Ingredients
- 1 cucumber
- 2 cup blueberries, fresh
- 2 Tbsp. scallions, sliced thin
- 1/2 cup cilantro, chopped
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. lime juice
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 cup feta, crumbled
Instructions
- Cut the cucumber in half, then using a spoon, remove the seeds. Next cut the cucumber into thin slices and place in a large bowl.
- Add the blueberries, scallions and cilantro and toss to combine.
- In a small bowl, whisk the olive oil, lime juice, salt and pepper, then add to the salad and toss.
- Fold in the crumbled feta and serve.
