Blueberry Salsa

Yields 6 servings

Ingredients

  • 2 cups blueberries, fresh
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell peppers, diced
  • 1/4 red onion, diced
  • 1 jalapeno, diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1 Tbsp. extra virgin olive oil
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Using a medium bowl, combine the blueberries, peppers, onion, cilantro, lime juice and olive oil, then mix together. Season with salt and pepper to taste.
  2. Serve with tortilla chips.

Nutrition per serving: 60 calories, 10 g carbohydrates, 2.5 g fat, 2 g fiber, 1 g protein, 100 mg sodium, 6 g sugar.
