Blueberry Salsa
Yields 6 servings
Ingredients
- 2 cups blueberries, fresh
- 1/2 red bell pepper, diced
- 1/2 yellow bell peppers, diced
- 1/4 red onion, diced
- 1 jalapeno, diced
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- 1 Tbsp. extra virgin olive oil
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Using a medium bowl, combine the blueberries, peppers, onion, cilantro, lime juice and olive oil, then mix together. Season with salt and pepper to taste.
- Serve with tortilla chips.
