Breakfast Quinoa

Yields 4 servings

Ingredients

  • 2 cups milk of choice
  • 1 cup quinoa, rinsed
  • 3 tbsp. light brown sugar
  • 1/8 tsp. ground cinnamon
  • 1 cup fresh berries

Instructions

  1. In a small saucepan, bring the milk to a boil. Add the quinoa, reduce heat to low and cover. Simmer until three fourths of the milk is absorbed, around 15 minutes.
  2. Add the sugar and cinnamon and continue to cook with the saucepan covered until the milk is completely absorbed, about 8 more minutes.
  3. Add the dried fruit and mix. Serve with additional milk, sugar, cinnamon and berries.

Nutrition per serving: 260 calories, 48 g carbohydrates, 5 mg cholesterol, 4 g fat, 4 g fiber, 10 g protein, 55 mg sodium, 20 g sugar.
