Breakfast Quinoa
Yields 4 servings
Ingredients
- 2 cups milk of choice
- 1 cup quinoa, rinsed
- 3 tbsp. light brown sugar
- 1/8 tsp. ground cinnamon
- 1 cup fresh berries
Instructions
- In a small saucepan, bring the milk to a boil. Add the quinoa, reduce heat to low and cover. Simmer until three fourths of the milk is absorbed, around 15 minutes.
- Add the sugar and cinnamon and continue to cook with the saucepan covered until the milk is completely absorbed, about 8 more minutes.
- Add the dried fruit and mix. Serve with additional milk, sugar, cinnamon and berries.
Nutrition per serving: 260 calories, 48 g carbohydrates, 5 mg cholesterol, 4 g fat, 4 g fiber, 10 g protein, 55 mg sodium, 20 g sugar.
