Broccoli Cheddar Fritters

Yields 4 servings

Ingredients

  • 3 cups broccoli, chopped into small pieces
  • 2 cups water
  • 1/2 cup cheddar cheese, shredded
  • 1 egg
  • 1/2 cup flour of choice
  • 2 garlic cloves, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Preheat the oven to 400°F and set aside a baking sheet.
  2. In a medium saucepan, add the broccoli and water and heat over medium high heat. Let simmer for 5 minutes or until broccoli is tender.
  3. Drain broccoli from the water and let cool.
  4. Next add the broccoli to the cheese, egg, flour, garlic, salt, pepper and mix thoroughly.
  5. Scoop out 1/8 cup of the mixture and place on the baking sheet until the batter is gone. Bake for 10-15 minutes on each side until golden brown. Then enjoy with your favorite dipping sauce.
