Broccoli Lemon Salad

Broccoli whole food

Yields 6 servings

Ingredients

  • 1 head of broccoli, cut into 1 inch pieces, stems peeled and sliced into 1/2 inch thick slices
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. lemon juice, fresh
  • 1 tsp. lemon zest
  • 1 small shallot, minced
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, bring salted water to a boil. Add the prepared broccoli and cook for 5 minutes or until tender. Or using a steamer, steam until tender.
  2. Drain broccoli and rinse under cold water until cool, then let dry.
  3. In a large serving bowl, whisk the olive oil, vinegar, lemon juice, lemon zest, shallot, salt and pepper. Add the broccoli and toss until coated then serve.

Nutrition per serving: 120 calories, 8 g carbohydrates, 10 g fat, 3 g fiber, 3 g protein, 2 g sugar.
