Broccoli Lemon Salad
Yields 6 servings
Ingredients
- 1 head of broccoli, cut into 1 inch pieces, stems peeled and sliced into 1/2 inch thick slices
- 1/4 cup extra virgin olive oil
- 2 Tbsp. red wine vinegar
- 1 Tbsp. lemon juice, fresh
- 1 tsp. lemon zest
- 1 small shallot, minced
- Salt and pepper to taste
Instructions
- In a large saucepan, bring salted water to a boil. Add the prepared broccoli and cook for 5 minutes or until tender. Or using a steamer, steam until tender.
- Drain broccoli and rinse under cold water until cool, then let dry.
- In a large serving bowl, whisk the olive oil, vinegar, lemon juice, lemon zest, shallot, salt and pepper. Add the broccoli and toss until coated then serve.
