Brussels Sprouts Gratin

Yields 6 servings

Ingredients

  • 1 1/2 lbs. Brussels sprouts, ends trimmed and halved
  • 2 large shallots, peeled & quartered
  • 2 cloves garlic, peeled and minced
  • 5 Tbsp. olive oil
  • Salt and pepper to taste
  • 1 1/2 cup panko bread crumbs
  • 3/4 cup heavy cream
  • 1 cup Gruyere, grated

Instructions

  1. Heat oven to 425°F.
  2. In a 9x13 baking dish, toss Brussels sprouts, shallots, garlic and 2 tablespoon olive oil. Season with salt and pepper, then bake for 30 minutes.
  3. Remove from oven, add the heavy cream, grated Gruyere and bread crumbs. Bake an additional 15 minutes or until bubbly then serve.

Nutrition per serving: 400 calories, 27 g carbohydrates, 55 mg cholesterol, 28 g fat, 4 g fiber, 13 g protein, 380 mg sodium, 2 g sugar.
