Brussels Sprouts Salad

Yields 6 servings

Ingredients

  • 5 Tbsp. extra virgin olive oil
  • 5 Tbsp. lemon juice, fresh
  • 1/4 cup fresh parsley, chopped
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 lb. Brussels sprouts, halved & thinly sliced
  • 1/2 cup toasted almonds, chopped
  • 1/2 cup pomegranate seeds
  • Shaved Parmesan, for serving

Instructions

  1. In a medium bowl, whisk the oil, lemon juice, parsley, salt and pepper together until combined. Add the sliced Brussels sprouts and toss until thoroughly combined.
  2. Let sit for at least 20 minutes to meld flavors. Toss salad occasionally.
  3. Add the almonds and pomegranate seeds and combine. Top with Parmesan and serve.
