Cajun Cabbage Skillet

Yields 4 servings

Ingredients

  • 2 Tbsp. canola oil
  • 8 oz. chicken andouille sausages, sliced into 1/4 inch slices
  • 1 small yellow onion, thinly sliced
  • Salt and pepper to taste
  • 1/2 small head cabbage, cored, halved crosswise and sliced into
  • 1/4 inch thick slices
  • 1/4 tsp. crushed red pepper
  • 2 cloves garlic, minced
  • 3 Tbsp. apple cider vinegar
  • 1 Tbsp. butter, unsalted
  • 3/4 cup sweet-tart apple (Gala or McIntosh), cored & sliced in 1/8 inch thick slices
  • 1 large scallion, thinly sliced
  • Hot sauce to serve

Instructions

  1. Heat a large skillet with the oil over medium-high heat. Add the sausage slices and cook until browned on both sides, about 2 minutes on each side. Remove the sausage from the pan and set aside.
  2. Add the onion and a splash of water to the pan, cooking until the onion is golden. Add the cabbage, salt, pepper, and crushed red pepper, stirring occasionally. Cook until the cabbage is tender.
  3. Next add the garlic and vinegar and cook until the vinegar has evaporated. Then add the butter and melt. Add the cooked sausage and sliced apple. Cook until the apples slices are just tender, about 3-4 minutes.
  4. Sprinkle the scallion on top and serve immediately. Top with hot sauce if desired.
