Caramelized Plantains
Yields 4 servings
Ingredients
- 1 Tbsp. unsalted butter
- 1 Tbsp. sugar
- 2 plantains, cut into 1/3 inch slices
- 1/3 cup apple juice
- 1 1/2 tsp. cinnamon, ground
Instructions
- Melt the butter in a 9 inch skillet over medium heat. Add the sugar and cook, stirring until a light syrup forms, around 2 minutes.
- Add the plantains, toss to coat and cook until tender, around 3 minutes. Add the apple juice and bring to boil for 1 minutes or until juice has slightly thickened. Mix in the cinnamon and remove from heat.
- Divide the plantains onto 4 small plates and spoon the juice over each plate and serve.
