Caramelized Plantains

Yields 4 servings

Ingredients

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. sugar
  • 2 plantains, cut into 1/3 inch slices
  • 1/3 cup apple juice
  • 1 1/2 tsp. cinnamon, ground

Instructions

  1. Melt the butter in a 9 inch skillet over medium heat. Add the sugar and cook, stirring until a light syrup forms, around 2 minutes.
  2. Add the plantains, toss to coat and cook until tender, around 3 minutes. Add the apple juice and bring to boil for 1 minutes or until juice has slightly thickened. Mix in the cinnamon and remove from heat.
  3. Divide the plantains onto 4 small plates and spoon the juice over each plate and serve.

Nutrition per serving: 150 calories, 34 g carbohydrates, 10 mg cholesterol, 3 g fat, 3 g fiber, 1 g protein, 5 mg sodium, 18 g sugar.
