Celeriac Remoulade

Yields 4 servings

Ingredients

  • 7 Tbsp. mayonnaise
  • 3 Tbsp. Dijon mustard
  • 1 fresh lemon juiced
  • 1 small celeriac
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Mix the mayonnaise, mustard and lemon juice together in a medium bowl. Season liberally with salt and pepper.
  2. Peel, then quarter the celeriac. Next, use a food processor or a hand grater to grate the celeriac. Add the grated celeriac to the dressing and mix until evenly coated. Sprinkle with fresh herbs if desired. Serve as a side dish. Lasts up to two days in the refrigerator.
