Chicken Endive Salad

Serving size: 3 servings

Ingredients

  • 1/4 cup walnut pieces
  • 1/4 cup walnut pieces 1 Tbsp. balsamic vinegar
  • 2 tsp. olive oil
  • 2 tsp. olive oil
  • Salt to taste
  • 1 1/2 cups cooked, shredded chicken
  • 3 medium Belgian endive (cored and chopped)
  • 1 tsp. dried tarragon, parsley or basil

Instructions

  1. Combine all ingredients together in a medium bowl and mix. Serve in a wrap or crackers.

Nutrition per serving: 250 calories, 29 g carbohydrates, 50 mg cholesterol, 10 g fat, 2 g fiber, 14 g protein, 350 mg sodium, 14 g sugar.
