Citrus Mint Salad

Ingredients

  • 4 oranges, segmented
  • 2 grapefruit, segmented
  • Zest of one lime
  • 2 tbsp. honey
  • 1 tbsp. minced fresh mint

Instructions

  1. Segment fruits into a bowl. Remove juice from the segmented fruit and put in another bowl.
  2. Add lime zest, honey, and mint to the citrus fruit juice. Stir to combine. Add juice mixture to the segmented fruits. Serve or refrigerate.

Nutrition per serving: 135 calories, 34 g carbohydrates, 5 g fiber, 2 g protein, 1 mg sodium, 30 g sugar.
